Grill:
2 red bell peppers, halved
2 green bell peppers, halved
1 small eggplant, cut lengthwise into 1/2-inch-thick slices
2 medium red onions, cut into thick slices
1 zucchini or 1 summer squash cut lengthwise into 1/2 -inch-thick slices
8 mushrooms, wiped clean
Let stand until cool enough to handle. Chop all the grilled vegetables into 1/4-inch pieces and combine in a bowl with:
2 tablespoons coarsely chopped fresh basil, fresh cilantro, or fresh parsley
Salt and ground black pepper to taste
About 1/4 cup Mojo, 1/4 cup Sauce Andalouse, or a vinaigrette of your choice
Divide among:
4 flatbreads, such as pita bread, lavash, or Flour Tortillas Flour Tortillas
Roll up as directed for Turkey and Avocado Roll-Ups.
